Is there a good easy way to
engage the differential lock on a 180?
I do not want to grind or force anything.
Also, ease of unlocking?

I don't think the 200 series (to include the 180) diff lock will even engage till a rear wheel is actually slipping. Then it's a simple matter of pulling on the lever. To avoid damage, the tractor should be heading in a straight line any time diff lock is engaged. That means don't turn the steering wheel either. Assuming it's working correctly, as soon as you back off on the throttle - the diff lock should disengage by itself. If not, just return the lever to the home position - and apply a little grease to looosen it up.
