The light is saying your pressure's low, so I wouldn't operate it until you find the problem. How old is the oil? ....

The 2000 doesn't have a thermostat. Put a temporary gage on it to see what your oil pressure really is. Running very long with low oil pressure can do great harm as I'm sure you know. Is your exterior radiator fins good and clean? Is your interior cooling system good and clean? ....

One parts site shows a cooling-system pump for it, $100+. Good the rad's full but is the coolant the right mixture? If the cap's seals are leaking that would lower the pressure and raise the temp a little; a new cap is $5. Has the system ever been cleaned? Are the fan and belt OK?
I'd first sort out the oil because the light means either the sender is faulty or the pressure's under 3 psi. ....
